The citrus comes through so clearly on the back end, bright and unexpected against all that deep raisin sweetness. I've eaten a lot of bars from single-origin makers, and this Huila lot really nails the balance between smooth and complex. Finished the whole thing in two sittings, no regrets.

The molasses note hits first, then the raisin sweetness lingers before that citrus finish sneaks in at the end. It's the kind of bar that makes you slow down and actually pay attention to each bite.

I’m not usually one for citrus in chocolate, but the raisin and orange peel notes here balance the deep molasses sweetness perfectly. You can really taste the care that went into growing these Trinitario beans.
