Finally got my water hardness exactly where I want it for my pale ales. The dissolved minerals drop to basically zero, so I can add back my own calcium and sulfate without guessing. Mason jar of tap water reads 0 on my TDS meter even after a full gallon passes through.
My TDS meter went from 280 to basically zero, which is exactly what I needed as a starting point for adjusting my own mineral profile. Even after brewing a few batches, the filter still reads 0-10, so I'm getting consistent water every time.
The 5-stage filtration drops my kettle's scale buildup to practically zero, and the neutral base means my pour-over finally tastes like the beans, not the minerals. I keep a spare pitcher filled for cold brew and it's made dialing in water hardness way less of a guessing game.
